Description
A comforting dish of golden chicken in a silky cream sauce with wilted greens and tangy tomatoes.
Ingredients
- 4 chicken breasts
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Season chicken breasts with salt and pepper.
- Cook chicken for 6-7 minutes on each side until golden brown and cooked through.
- Remove chicken and set aside.
- In the same skillet, add garlic and cook until fragrant.
- Add sun-dried tomatoes and cook for 2 minutes.
- Pour in chicken broth and bring to a simmer.
- Add heavy cream and Italian seasoning, stirring to combine.
- Add spinach and cook until wilted.
- Return chicken to the skillet and coat with sauce.
- Simmer for 5 minutes to heat through.
Notes
For serving, pair with pasta or a fresh salad. Can be made ahead and reheated.
