A comforting meal featuring ground turkey, savory mushrooms, and a rich cream sauce served over egg noodles, perfect for busy families.
Ingredients
- 1 pound ground turkey
 - 1 medium onion, diced
 - 2 cloves garlic, minced
 - 8 ounces mushrooms, sliced
 - 1 teaspoon paprika
 - 1 teaspoon salt
 - 1/2 teaspoon black pepper
 - 1 cup chicken broth
 - 1 cup sour cream
 - 2 tablespoons all-purpose flour
 - 2 tablespoons olive oil
 - 8 ounces egg noodles
 - Fresh parsley, chopped (for garnish)
 - Optional: Greek yogurt to substitute for sour cream
 - Optional: 1 cup frozen peas or spinach
 
Instructions
- In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until it turns translucent. Then, add the minced garlic and cook for another minute.
 - Add the ground turkey to the skillet; cook for 5–7 minutes until it is browned.
 - Stir in the mushrooms, paprika, salt, and pepper; cook for about 5 minutes until the mushrooms are tender.
 - In a small bowl, whisk together the flour and chicken broth; pour this mixture into the skillet and stir. Bring it to a gentle simmer and cook for 3–4 minutes until the sauce slightly thickens.
 - Lower the heat and stir in the sour cream until everything is fully combined. Cook for 2 more minutes, but do not let it boil.
 - Meanwhile, cook the egg noodles according to the package directions and then drain them.
 - Serve the creamy turkey stroganoff over the noodles and garnish with fresh parsley.
 
Notes
For extra flavor, consider adding Worcestershire sauce or Dijon mustard to the sauce. You can also use Greek yogurt instead of sour cream if you prefer.
