Ingredients
- 12 oz tortellini
- 1 lb shrimp, peeled and deveined
- 2 cups fresh spinach
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the tortellini according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add shrimp and cook until pink and opaque.
- Stir in spinach and cook until wilted.
- Lower heat and add heavy cream and parmesan cheese; stir until combined and creamy.
- Toss in the cooked tortellini and mix well.
- Season with salt and pepper to taste.
- Serve warm.
