Ingredients
- 2 lb fresh tomatoes (about 900 g)
- 1 whole head garlic
- 1 small onion
- ¼ cup fresh basil leaves

- Salt & black pepper, to taste
- ½ cup heavy cream
Instructions
- Preheat oven to 400°F (200°C). Slice tomatoes in halves and place on a baking sheet with the garlic. Drizzle with olive oil, salt, pepper, and red pepper flakes.
- Roast for about 30 minutes until tomatoes are soft and garlic is fragrant.
- Peel roasted garlic cloves and add to a pot with roasted tomatoes, onion, and broth. Simmer over medium heat for 15-20 minutes.
- Blend the mixture until smooth and creamy. Return to stove and stir in heavy cream, adjusting seasoning.
- Serve with fresh basil leaves and optional drizzle of olive oil or sprinkle of parmesan cheese.
