Ingredients

  • 2 lb fresh tomatoes (about 900 g)
  • 1 whole head garlic
  • 1 small onion
  • ¼ cup fresh basil leaves
  • 2 cups vegetable or chicken broth
  • 2 tbsp olive oil
  • ½ tsp red pepper flakes
  • Salt & black pepper, to taste
  • ½ cup heavy cream


Instructions

  1. Preheat oven to 400°F (200°C). Slice tomatoes in halves and place on a baking sheet with the garlic. Drizzle with olive oil, salt, pepper, and red pepper flakes.
  2. Roast for about 30 minutes until tomatoes are soft and garlic is fragrant.
  3. Peel roasted garlic cloves and add to a pot with roasted tomatoes, onion, and broth. Simmer over medium heat for 15-20 minutes.
  4. Blend the mixture until smooth and creamy. Return to stove and stir in heavy cream, adjusting seasoning.
  5. Serve with fresh basil leaves and optional drizzle of olive oil or sprinkle of parmesan cheese.
