A quick and easy creamy pasta salad that looks gourmet but requires minimal effort. Perfect for summer barbecues and potlucks.
Ingredients
- 8 oz pasta (rotini or penne)
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1 cup frozen peas, thawed
- 1/2 cup diced bell pepper (optional)
- Salt and pepper to taste
- Fresh herbs (like parsley or basil) for garnish
Instructions
- Cook the pasta according to package instructions. Drain and rinse with cold water.
- In a large bowl, combine mayonnaise and sour cream, mixing well.
- Add the cooled pasta along with cherry tomatoes, cucumber, red onion, peas, and bell pepper.
- Season with salt and pepper and stir until everything is well coated.
- Chill in the refrigerator for at least 30 minutes before serving.
- Garnish with fresh herbs before serving. Enjoy!
Notes
Make sure to rinse the pasta with cold water and do not skip the chilling step for the best flavor.
