Ingredients
- 1 pound of fresh mushrooms (any variety you prefer)
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 3 tablespoons of olive oil
- 3 cups of vegetable or chicken broth
- 2 tablespoons of all-purpose flour
- 1 cup of milk (or any milk alternative for a lighter option)
- 1 teaspoon of thyme (fresh or dried)
- Salt and pepper to taste
Instructions
- Begin by cleaning the mushrooms with a damp cloth and slice them into quarters or rough chop.
- In a large pot, heat olive oil over medium heat and sauté the chopped onions for 3-4 minutes until translucent.
- Add minced garlic and stir until fragrant.
- Add sliced mushrooms, season with salt and pepper, and cook for about 8-10 minutes until tender.
- Sprinkle flour over the mushrooms and stir well, cooking for an additional 2 minutes.
- Gradually pour in broth while stirring to avoid lumps, and bring to a gentle simmer for about 10 minutes.
- Blend the soup for a creamy texture or leave it chunky as preferred.
- Add milk and thyme, simmer for another 5 minutes, and adjust seasoning.
- Serve warm and enjoy!
Notes
For extra flavor, roast your mushrooms beforehand. Consider using heavy cream for a richer texture.
