  • 1 teaspoon of thyme (fresh or dried)
  • Salt and pepper to taste


Instructions

  1. Begin by cleaning the mushrooms with a damp cloth and slice them into quarters or rough chop.
  2. In a large pot, heat olive oil over medium heat and sauté the chopped onions for 3-4 minutes until translucent.
  3. Add minced garlic and stir until fragrant.
  4. Add sliced mushrooms, season with salt and pepper, and cook for about 8-10 minutes until tender.
  5. Sprinkle flour over the mushrooms and stir well, cooking for an additional 2 minutes.
  6. Gradually pour in broth while stirring to avoid lumps, and bring to a gentle simmer for about 10 minutes.
  7. Blend the soup for a creamy texture or leave it chunky as preferred.
  8. Add milk and thyme, simmer for another 5 minutes, and adjust seasoning.
