  • 1/3 cup Kalamata olives, sliced
  • 2 cups mushrooms
  • 1/2 cup heavy cream
  • 1/2 cup chicken stock
  • 1 cup Parmesan cheese, freshly grated
  • 2 cups fresh spinach


Instructions

  1. Heat half of the olive oil in a large skillet over medium heat.
  2. Season chicken breasts with paprika, thyme, oregano, sea salt, pepper, and chili flakes.
  3. Place flour in a shallow dish and dredge each chicken piece, shaking off the excess.
  4. Add chicken to skillet, brown each side for about 4-5 minutes until golden. Remove and set aside.
  5. In the same skillet, add remaining olive oil, minced garlic, and sun-dried tomatoes. Sauté until garlic is fragrant.
