Ingredients
- 1 lb ground chicken
- ½ cup breadcrumbs panko or regular
- 1 egg
- ¼ cup grated Parmesan cheese
- 2 cloves garlic, minced
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp dried thyme
- 2 tbsp olive oil, for searing
- 2 tbsp butter
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken broth
- ¼ cup grated Parmesan cheese
- ½ tsp salt
- ¼ tsp black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- Mix ground chicken, breadcrumbs, egg, Parmesan cheese, minced garlic, salt, black pepper, and dried thyme in a bowl. Form the mixture into small, even-sized meatballs.
- Heat olive oil in a frying pan over medium heat. Add the meatballs in batches, searing each side until golden brown and cooked through, about 5 minutes. Remove and set aside.
- In the same pan, add butter, then sauté sliced mushrooms and minced garlic until the mushrooms are tender and the garlic is fragrant.
- Pour in heavy cream and chicken broth, stirring to combine. Simmer until the sauce thickens slightly.
- Return the meatballs to the pan and coat them with the creamy mushroom sauce. Simmer for a couple of minutes to absorb the flavors.
- Transfer to a serving dish, sprinkle with grated Parmesan cheese and freshly chopped parsley. Serve hot.
Notes
- Ensure your meatballs are uniform in size for even cooking.
- If a thicker sauce is desired, let it simmer longer before adding the meatballs back.
- Add a splash of white wine to the sauce for extra flavor.
