Indulge in these Creamy Mushroom Chicken Meatballs, a perfect Dinner Entree Idea that blends the nostalgic warmth of family gatherings with the elegance of a Best Italian Dinner. Crafted for Meals For Family Of 5, it offers a taste of comfort and culinary delight.

Ingredients

  • 1 lb ground chicken
  • ½ cup breadcrumbs panko or regular
  • 1 egg
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp dried thyme
  • 2 tbsp olive oil, for searing
  • 2 tbsp butter
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ¼ cup grated Parmesan cheese
  • ½ tsp salt
  • ¼ tsp black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Mix ground chicken, breadcrumbs, egg, Parmesan cheese, minced garlic, salt, black pepper, and dried thyme in a bowl. Form the mixture into small, even-sized meatballs.
  2. Heat olive oil in a frying pan over medium heat. Add the meatballs in batches, searing each side until golden brown and cooked through, about 5 minutes. Remove and set aside.
  3. In the same pan, add butter, then sauté sliced mushrooms and minced garlic until the mushrooms are tender and the garlic is fragrant.
  4. Pour in heavy cream and chicken broth, stirring to combine. Simmer until the sauce thickens slightly.
  5. Return the meatballs to the pan and coat them with the creamy mushroom sauce. Simmer for a couple of minutes to absorb the flavors.
  6. Transfer to a serving dish, sprinkle with grated Parmesan cheese and freshly chopped parsley. Serve hot.

Notes

  • Ensure your meatballs are uniform in size for even cooking.
  • If a thicker sauce is desired, let it simmer longer before adding the meatballs back.
  • Add a splash of white wine to the sauce for extra flavor.
