Description
Golden seared chicken simmered in a creamy garlic mushroom sauce with thyme, Parmesan, and fresh herbs. Comfort food perfect with mashed potatoes, pasta, or rice.
Ingredients
- 2 large boneless skinless chicken breasts (or thighs)
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 8 oz cremini mushrooms, sliced
- 3 cloves garlic, minced
- 1 small onion, chopped
- ½ cup chicken broth (or dry white wine)
- 1 cup heavy cream
- ½ tsp dried thyme (or 1 tsp fresh thyme)
- ¼ cup Parmesan (optional)
- Salt and pepper, to taste
- Fresh parsley or rosemary, for garnish
Instructions
- Prep the Chicken: Slice chicken breasts in half lengthwise. Season with salt, pepper, and thyme.
- Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes on each side until golden. Remove and set aside.
- Sauté Mushrooms and Aromatics: In the same pan, melt butter. Add mushrooms and cook until browned. Stir in onion and garlic; cook until soft and fragrant.
- Deglaze the Pan: Pour in chicken broth or wine. Scrape up browned bits for added flavor.
- Create the Cream Sauce: Lower the heat. Add heavy cream, Parmesan, salt, and pepper. Simmer until sauce thickens (3–5 mins).
- Finish Cooking: Return the chicken to the skillet. Spoon sauce over it and cook another 5–7 minutes until internal temperature hits 165°F.
- Serve: Garnish with fresh parsley or rosemary. Serve over mashed potatoes, pasta, or rice.
Notes
For extra richness, add a splash of white wine to the sauce. Can substitute half-and-half for lighter version.
