This Classic Creamy Macaroni Salad is a timeless favorite for picnics, potlucks, and barbecues. It’s creamy, tangy, and packed with crisp veggies. A crowd-pleasing side dish that’s easy to make ahead.

Ingredients

  • 2 cups elbow macaroni (uncooked)
  • 1 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 2 tablespoons white vinegar
  • 1 tablespoon sugar (adjust to taste)
  • Salt and black pepper to taste
  • 1/2 cup celery, finely chopped
  • 1/2 cup red onion, finely chopped
  • 1/2 cup green bell pepper, diced
  • 1/4 cup grated carrot (optional)
  • 1/4 cup pimentos (optional)

Instructions

  1. Cook the Pasta: Bring a pot of salted water to a boil. Add macaroni and cook until al dente. Drain and rinse under cold water to cool completely.
  2. Prepare the Dressing: In a large mixing bowl, whisk together mayonnaise, yellow mustard, white vinegar, sugar, salt, and pepper until smooth.
  3. Mix: Add cooled pasta, celery, red onion, green bell pepper, carrot, and pimentos (if using) to the dressing. Stir until everything is evenly coated.
  4. Chill: Cover and refrigerate for at least 2 hours (preferably overnight) to allow the flavors to meld.
  5. Serve: Give it a gentle stir before serving chilled.

Notes

Feel free to add chopped hard-boiled eggs or sweet relish for extra flavor. Adjust sugar and mustard levels to balance sweetness and tanginess to your preference.
