Ingredients
- 2 cups elbow macaroni (uncooked)
- 1 cup mayonnaise
- 2 tablespoons yellow mustard
- 2 tablespoons white vinegar
- 1 tablespoon sugar (adjust to taste)
- Salt and black pepper to taste
- 1/2 cup celery, finely chopped
- 1/2 cup red onion, finely chopped
- 1/2 cup green bell pepper, diced
- 1/4 cup grated carrot (optional)
- 1/4 cup pimentos (optional)
Instructions
- Cook the Pasta: Bring a pot of salted water to a boil. Add macaroni and cook until al dente. Drain and rinse under cold water to cool completely.
- Prepare the Dressing: In a large mixing bowl, whisk together mayonnaise, yellow mustard, white vinegar, sugar, salt, and pepper until smooth.
- Mix: Add cooled pasta, celery, red onion, green bell pepper, carrot, and pimentos (if using) to the dressing. Stir until everything is evenly coated.
- Chill: Cover and refrigerate for at least 2 hours (preferably overnight) to allow the flavors to meld.
