Ingredients
- 1 pound gnocchi
- 2 chicken breasts, diced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 lemon, zested and juiced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the gnocchi according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through.
- Add minced garlic and sauté for about a minute until fragrant.
- Reduce heat to low and stir in heavy cream, Parmesan cheese, lemon zest, and lemon juice. Cook until the cheese has melted and the sauce is smooth.
- Add the cooked gnocchi to the sauce, stirring gently to combine. Cook for an additional 2-3 minutes.
- Garnish with fresh parsley before serving.
