Ingredients
- 4 chicken thighs (bone-in, skin-on)
- 1 teaspoon kosher salt
- 1 teaspoon lemon pepper
- 3 tablespoons salted butter (divided)
- 3 cloves minced garlic
- ½ cup low sodium chicken broth
- 1 cup heavy cream
- ½ cup grated parmesan cheese
- ¼ cup fresh lemon juice
- 1 teaspoon fresh thyme leaves
- 5 ounces baby spinach
Instructions
- Season the chicken thighs with kosher salt and lemon pepper.
- Heat 2 tablespoons of butter in a large skillet over medium heat. Add chicken thighs skin-side down and cook until golden brown, about 6-7 minutes. Flip and cook for another 5 minutes. Set aside.
- Add the remaining tablespoon of butter to the skillet. Sauté garlic until fragrant, about 1 minute. Pour in chicken broth, stirring up any browned bits.
- Stir in heavy cream and parmesan cheese, whisking until smooth and thickened slightly.
- Add lemon juice and thyme, stirring well. Return chicken to the skillet, covering with sauce. Cover and simmer for 10-15 minutes, until cooked through.
- Add spinach in the last 3 minutes to wilt. Serve with sauce spooned over the chicken.
