Ingredients

  • 4 chicken thighs (bone-in, skin-on)
  • 1 teaspoon kosher salt
  • 1 teaspoon lemon pepper
  • 3 tablespoons salted butter (divided)
  • 3 cloves minced garlic
  • ½ cup low sodium chicken broth
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • ¼ cup fresh lemon juice
  • 1 teaspoon fresh thyme leaves
  • 5 ounces baby spinach


Instructions

  1. Season the chicken thighs with kosher salt and lemon pepper.
  2. Heat 2 tablespoons of butter in a large skillet over medium heat. Add chicken thighs skin-side down and cook until golden brown, about 6-7 minutes. Flip and cook for another 5 minutes. Set aside.
  3. Add the remaining tablespoon of butter to the skillet. Sauté garlic until fragrant, about 1 minute. Pour in chicken broth, stirring up any browned bits.
  4. Stir in heavy cream and parmesan cheese, whisking until smooth and thickened slightly.
  5. Add lemon juice and thyme, stirring well. Return chicken to the skillet, covering with sauce. Cover and simmer for 10-15 minutes, until cooked through.
  6. Add spinach in the last 3 minutes to wilt. Serve with sauce spooned over the chicken.
