Ingredients

  • 1 pound Italian sausage
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups gnocchi
  • 1 cup heavy cream
  • 1 cup fresh spinach
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving


Instructions

  1. Heat a large pot over medium heat and cook the Italian sausage, breaking it apart, for 5-7 minutes until browned.
  2. Add diced onion and sauté for 3-4 minutes until translucent. Stir in minced garlic for the last minute.
  3. Pour in the chicken broth and bring to a boil.
  4. Add gnocchi and cook according to package instructions until they rise to the surface.
  5. Reduce heat to low, stir in heavy cream and spinach until spinach wilts.
  6. Season with salt and pepper, then serve hot topped with grated Parmesan cheese.

Notes

For best results, use fresh ingredients and don’t overcook the gnocchi. This recipe can be made ahead of time and reheated.
