Description
A delicious and easy meal featuring flaky salmon in a creamy herb sauce with fresh spinach and tomatoes.
Ingredients
- 4 salmon fillets
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried herbs (such as dill or thyme)
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat.
- Season salmon fillets with salt, pepper, and dried herbs.
- Add salmon to the skillet and cook for about 4-5 minutes on each side until cooked through. Remove and set aside.
- In the same skillet, add minced garlic and cook for 1 minute.
- Add cherry tomatoes and spinach; cook until spinach is wilted.
- Pour in heavy cream and stir to combine.
- Return salmon to the skillet, spooning the creamy sauce over the top.
- Cook for an additional 2-3 minutes until heated through. Serve warm.
Notes
Serve warm with a drizzle of extra creamy sauce. Pair with steamed rice, quinoa, or a light salad.
