Description

A delicious and easy meal featuring flaky salmon in a creamy herb sauce with fresh spinach and tomatoes.


Ingredients

  • 4 salmon fillets
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried herbs (such as dill or thyme)
  • Salt and pepper to taste


Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Season salmon fillets with salt, pepper, and dried herbs.
  3. Add salmon to the skillet and cook for about 4-5 minutes on each side until cooked through. Remove and set aside.
  4. In the same skillet, add minced garlic and cook for 1 minute.
  5. Add cherry tomatoes and spinach; cook until spinach is wilted.
  6. Pour in heavy cream and stir to combine.
  7. Return salmon to the skillet, spooning the creamy sauce over the top.
  8. Cook for an additional 2-3 minutes until heated through. Serve warm.

Notes

Serve warm with a drizzle of extra creamy sauce. Pair with steamed rice, quinoa, or a light salad.
