Ingredients

  • 1 package gnocchi
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup crumbled feta cheese
  • Salt and pepper to taste
  • Grated Parmesan for serving (optional)


Instructions

  1. Cook the gnocchi according to package instructions in salted water until they float. Strain and set aside.
  2. In a large skillet, heat olive oil over medium heat and sauté the garlic until fragrant.
  3. Add the spinach and cook until wilted.
  4. Pour in the heavy cream and bring to a gentle simmer.
  5. Stir in the crumbled feta and season with salt and pepper.
  6. Add the cooked gnocchi and gently toss to coat them in the sauce.

Notes
