Ingredients
- 1 package gnocchi
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 4 cups fresh spinach
- 1 cup heavy cream
- 1 cup crumbled feta cheese
- Salt and pepper to taste
- Grated Parmesan for serving (optional)
Instructions
- Cook the gnocchi according to package instructions in salted water until they float. Strain and set aside.
- In a large skillet, heat olive oil over medium heat and sauté the garlic until fragrant.
- Add the spinach and cook until wilted.
- Pour in the heavy cream and bring to a gentle simmer.
- Stir in the crumbled feta and season with salt and pepper.
- Add the cooked gnocchi and gently toss to coat them in the sauce.
- Serve hot, topped with grated Parmesan if desired.
Notes
For a lighter version, substitute heavy cream with half and half or whole milk. To enhance the flavor, add a pinch of red pepper flakes while sautéing the garlic.
