Ingredients

  • 1 cup orzo pasta
  • 2 Italian sausages, casings removed
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the Italian sausage and cook until browned, breaking it apart with a spoon.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the orzo and chicken broth. Bring to a boil, then reduce heat and let simmer for about 10 minutes, or until the orzo is al dente.
  5. Stir in the heavy cream and Parmesan cheese until well combined.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh parsley before serving.

Notes

For added flavor, consider browning the sausage a day ahead and storing it. Stir in some spinach or kale for added nutrition.
