Description

A creamy, protein-packed pasta dish featuring whole wheat pasta and lean chicken in a delicious garlic and Parmesan sauce.


Ingredients

  • 8 oz whole wheat pasta
  • 1 lb lean chicken breast, diced
  • 1 cup Greek yogurt
  • 1 cup grated Parmesan cheese
  • 2-3 cloves garlic, minced
  • Salt and pepper to taste
  • 1-2 tbsp olive oil
  • Fresh parsley for garnish (optional)


Instructions

  1. Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes.
  3. Add minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
  4. Reduce heat to low and stir in the Greek yogurt and Parmesan cheese until well combined.
  5. Add the cooked pasta to the skillet, mixing well to coat. Season with salt and pepper to taste.
  6. Serve warm, garnished with fresh parsley if desired.

Notes

For additional flavor, add red pepper flakes. Substitute chicken thighs for added tenderness or customize with vegetables like spinach or broccoli.
