A comforting and creamy pasta dish featuring garlic, parmesan cheese, and chicken, perfect for busy weeknights or special occasions.
Ingredients
- 8 oz whole wheat pasta
- 2 cloves minced garlic
- 2 cups chopped, cooked lean chicken breast
- 1 cup Greek yogurt
- 1/2 cup grated parmesan cheese
- 1 cup spinach (optional)
- Olive oil
- Salt and pepper to taste
Instructions
- Boil a large pot of water and cook the pasta according to package instructions for 8-10 minutes until al dente. Drain and set aside.
- In a large skillet, heat a drizzle of olive oil over medium heat and sauté minced garlic for 30-60 seconds until fragrant.
- Add chopped, cooked chicken to the skillet and stir for 2-3 minutes until heated through.
- Reduce heat to low and stir in Greek yogurt and grated parmesan cheese until creamy.
- If using, add spinach and allow it to wilt for about a minute.
- Combine the drained pasta with the sauce in the skillet, tossing to coat evenly.
- Season with salt and pepper to taste.
- Serve warm, optionally garnished with fresh herbs or extra parmesan.
Notes
Use whole wheat pasta for added nutrition. Store leftovers in the refrigerator for 3-4 days or freeze for up to 2 months.
