Description

A comforting and creamy pasta dish featuring garlic, parmesan cheese, and chicken, perfect for busy weeknights or special occasions.


Ingredients

  • 8 oz whole wheat pasta
  • 2 cloves minced garlic
  • 2 cups chopped, cooked lean chicken breast
  • 1 cup Greek yogurt
  • 1/2 cup grated parmesan cheese
  • 1 cup spinach (optional)
  • Olive oil
  • Salt and pepper to taste


Instructions

  1. Boil a large pot of water and cook the pasta according to package instructions for 8-10 minutes until al dente. Drain and set aside.
  2. In a large skillet, heat a drizzle of olive oil over medium heat and sauté minced garlic for 30-60 seconds until fragrant.
  3. Add chopped, cooked chicken to the skillet and stir for 2-3 minutes until heated through.
  4. Reduce heat to low and stir in Greek yogurt and grated parmesan cheese until creamy.
  5. If using, add spinach and allow it to wilt for about a minute.
  6. Combine the drained pasta with the sauce in the skillet, tossing to coat evenly.
  7. Season with salt and pepper to taste.
  8. Serve warm, optionally garnished with fresh herbs or extra parmesan.

Notes

Use whole wheat pasta for added nutrition. Store leftovers in the refrigerator for 3-4 days or freeze for up to 2 months.
