Ingredients
- 4 bone-in, skin-on chicken thighs
- Salt and pepper, to taste
- 1 tablespoon butter
- 1 tablespoon olive oil
- 8 oz fresh cremini or button mushrooms, diced
- 3 garlic cloves, minced
- 1/2 cup chicken broth
- 3/4 cup heavy cream
- 2 tablespoons fresh parsley or thyme, chopped (plus extra for garnish)
- Additional salt and pepper, to taste
Instructions
- Season the chicken thighs with salt and pepper.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Add the chicken thighs, skin side down, and cook until the skin is golden brown, about 5-7 minutes. Flip and sear the other side for another 5 minutes. Remove and set aside.
- In the same skillet, add mushrooms and sauté until browned, about 5 minutes. Add minced garlic and stir for 1 minute.
- Pour in the chicken broth and deglaze the pan, scraping the flavorful bits from the bottom.
- Reduce heat to a simmer and stir in the heavy cream, cooking until slightly thickened, about 2-3 minutes.
- Return the chicken to the skillet, nestling it into the sauce. Cover and cook over low heat for an additional 15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Transfer the chicken to a serving platter, spoon sauce over the top, and garnish with fresh parsley or thyme.
Notes
- Let the chicken sear properly before turning to achieve a crispy skin.
- Allow the sauce time to thicken for a rich texture.
- Use fresh mushrooms for optimal flavor.
- Customize the dish with spices and herbs of your choice.
