Ingredients

  • 4 bone-in chicken thighs (about 1.5 lbs)
  • 8 oz fresh cremini or button mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large sauté pan over medium heat. Season chicken thighs with salt and pepper.
  2. Add chicken thighs skin-side down, cook until golden brown and crispy, about 5-7 minutes. Flip and cook for another 3-5 minutes. Remove and set aside.

  4. Reduce heat, stir in heavy cream, and bring to a gentle simmer. Return chicken to the pan and spoon sauce over each piece. Cover and cook for 15 minutes until chicken is tender.
  5. Remove lid and let the sauce thicken slightly. Transfer chicken to a platter, spoon mushroom sauce over, and garnish with fresh herbs.
