Ingredients
- 4 bone-in chicken thighs (about 1.5 lbs)
- 8 oz fresh cremini or button mushrooms, sliced
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large sauté pan over medium heat. Season chicken thighs with salt and pepper.
- Add chicken thighs skin-side down, cook until golden brown and crispy, about 5-7 minutes. Flip and cook for another 3-5 minutes. Remove and set aside.
- In the same pan, sauté mushrooms and garlic until tender. Pour in chicken broth. Scrape browned bits from the pan.
- Reduce heat, stir in heavy cream, and bring to a gentle simmer. Return chicken to the pan and spoon sauce over each piece. Cover and cook for 15 minutes until chicken is tender.
- Remove lid and let the sauce thicken slightly. Transfer chicken to a platter, spoon mushroom sauce over, and garnish with fresh herbs.
