A refreshing side dish with a lovely crunch, this salad combines fresh cucumbers and carrots with a creamy dressing.
Ingredients
- 2 cups cucumbers, sliced
- 2 cups carrots, grated
- 1/2 cup plain yogurt or sour cream
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- 1 clove garlic, minced (optional)
- Salt and pepper to taste
- Fresh herbs (like dill or parsley) for garnish
Instructions
- In a large bowl, combine the sliced cucumbers and grated carrots.
- In a separate bowl, mix together the yogurt (or sour cream), mayonnaise, lemon juice, and garlic if using.
- Pour the dressing over the cucumber and carrot mixture, and toss until well coated.
- Season with salt and pepper to taste.
- Garnish with fresh herbs if desired.
- Chill in the refrigerator for at least 30 minutes before serving to let the flavors meld.

Best served chilled. Store in an airtight container for 2-3 days, stir before serving.
