Ingredients

  • 2 cups cucumbers, sliced
  • 2 cups carrots, grated
  • 1/2 cup plain yogurt or sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced (optional)
  • Salt and pepper to taste
  • Fresh herbs (like dill or parsley) for garnish


Instructions

  1. In a large bowl, combine the sliced cucumbers and grated carrots.
  2. In a separate bowl, mix together the yogurt (or sour cream), mayonnaise, lemon juice, and garlic if using.
  3. Pour the dressing over the cucumber and carrot mixture, and toss until well coated.
  4. Season with salt and pepper to taste.
  5. Garnish with fresh herbs if desired.
  6. Chill in the refrigerator for at least 30 minutes before serving to let the flavors meld.
