Description
A comforting dish that combines the creamy texture of cottage cheese with tender orzo pasta, perfect for any occasion.
Ingredients
- 1 cup orzo pasta
- 1 cup cottage cheese
- 2 cups vegetable or chicken broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried Italian herbs (oregano, basil, thyme)
- Salt and pepper to taste
- Fresh parsley or basil for garnish
Instructions
- In a saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3 to 4 minutes until it becomes translucent.
- Stir in the minced garlic and cook for an additional 1 minute, making sure not to let it burn.
- Pour in the vegetable or chicken broth and bring it to a boil.
- Once boiling, add the orzo pasta and cook according to package instructions, usually about 8-10 minutes, stirring occasionally.
- When the orzo is al dente, reduce the heat to low. Add the cottage cheese and stir well until it becomes creamy and well incorporated.
- Season with dried Italian herbs, salt, and pepper to taste. Cook for another 1-2 minutes to allow the flavors to meld.
- Serve hot, garnished with fresh parsley or basil.
Notes
Choose high-quality cottage cheese for the creamiest texture. Don’t overcook the orzo; it should remain slightly firm to the bite. Add seasonal vegetables or proteins for customization.
