Ingredients

  • 1 large head of cauliflower, cut into bite-sized florets
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese


Instructions

  1. Prepare the cauliflower by cutting it into bite-sized florets.
  2. Steam the florets for about 5 to 7 minutes until tender but still with some bite.
  3. Melt butter over medium heat in a medium-sized saucepan and whisk in flour for about a minute to create a roux.
  4. Gradually add in heavy cream and milk, whisking constantly until the mixture thickens.
  5. Season the sauce with garlic powder, onion powder, salt, and pepper.
  6. Stir in shredded cheddar cheese until melted and well combined.
  7. Gently fold in the steamed cauliflower florets to coat them in the cheese sauce.
  8. Transfer the mixture to a greased baking dish and top with grated Parmesan cheese.
  9. Preheat oven to 375°F (190°C) and bake for 20 to 25 minutes until golden and bubbly.
  10. Allow to rest for a few minutes before serving.
