Warm, creamy, and packed with flavor, this Creamy Cajun Potato Soup is everything you need to embrace the cozy vibes of the season.
Ingredients
- 2 pounds potatoes, peeled and diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Chopped green onions for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until they soften and become fragrant.
- Add the diced potatoes along with the Cajun seasoning and stir, ensuring the potatoes get coated evenly.
- Pour in the broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer until the potatoes are tender, about 15 to 20 minutes.
- After the potatoes have softened, use a potato masher or an immersion blender to achieve your desired consistency.
- Stir in the heavy cream, then season with salt and pepper to taste.
- Serve hot and garnish with chopped green onions.
Notes
For best flavor, prepare the soup a day ahead and add the heavy cream when reheating.
