Description

Warm, creamy, and packed with flavor, this Creamy Cajun Potato Soup is everything you need to embrace the cozy vibes of the season.

Ingredients

  • 2 pounds potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped green onions for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until they soften and become fragrant.
  2. Add the diced potatoes along with the Cajun seasoning and stir, ensuring the potatoes get coated evenly.
  3. Pour in the broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer until the potatoes are tender, about 15 to 20 minutes.
  4. After the potatoes have softened, use a potato masher or an immersion blender to achieve your desired consistency.
  5. Stir in the heavy cream, then season with salt and pepper to taste.
  6. Serve hot and garnish with chopped green onions.

Notes

For best flavor, prepare the soup a day ahead and add the heavy cream when reheating.
