Ingredients

  • 4 cups potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped green onions for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and fragrant.
  2. Once the onion is translucent, add the diced potatoes and broth. Bring the mixture to a boil.
  3. After reaching a boil, reduce the heat and let it simmer until the potatoes are tender, about 15 to 20 minutes.
  4. Stir in the heavy cream and Cajun seasoning. Allow the soup to simmer for an additional five minutes to let the flavors meld.
  5. Finally, season with salt and pepper to taste. Serve hot, garnished with chopped green onions.

Notes
