Ingredients
- 4 cups potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Chopped green onions for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and fragrant.
- Once the onion is translucent, add the diced potatoes and broth. Bring the mixture to a boil.
- After reaching a boil, reduce the heat and let it simmer until the potatoes are tender, about 15 to 20 minutes.
- Stir in the heavy cream and Cajun seasoning. Allow the soup to simmer for an additional five minutes to let the flavors meld.
- Finally, season with salt and pepper to taste. Serve hot, garnished with chopped green onions.
Notes
Store leftovers in an airtight container for 3 to 4 days, or freeze for up to 2 months. Reheat on the stove, adding broth or water if too thick.
