  • 1 lb gnocchi
  • 1 medium butternut squash, peeled and diced
  • 1 lb Italian sausage, casings removed
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh sage leaves for garnish


Instructions

  1. Boil water in a large pot and cook the gnocchi according to package instructions, typically 2–3 minutes until they float.
  2. Drain the gnocchi and set aside.
  3. In a skillet, cook the Italian sausage over medium heat, breaking it into smaller pieces until browned (5-7 minutes). Remove and set aside.
  4. Add diced butternut squash to the skillet and sauté in the sausage drippings for 10–15 minutes until tender.
  5. Stir in minced garlic and cook for 1 additional minute.
  6. Pour in heavy cream and bring to a gentle simmer; mix in Parmesan cheese until smooth.
