Ingredients
- 1 lb gnocchi
- 1 medium butternut squash, peeled and diced
- 1 lb Italian sausage, casings removed
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh sage leaves for garnish
Instructions
- Boil water in a large pot and cook the gnocchi according to package instructions, typically 2–3 minutes until they float.
- Drain the gnocchi and set aside.
- In a skillet, cook the Italian sausage over medium heat, breaking it into smaller pieces until browned (5-7 minutes). Remove and set aside.
- Add diced butternut squash to the skillet and sauté in the sausage drippings for 10–15 minutes until tender.
- Stir in minced garlic and cook for 1 additional minute.
- Pour in heavy cream and bring to a gentle simmer; mix in Parmesan cheese until smooth.
- Add cooked gnocchi and sausage back to the skillet, stirring to combine and heat through.
- Garnish with fresh sage leaves before serving.
Notes
For extra flavor, use fresh sage instead of dried herbs. Avoid overcooking gnocchi to maintain texture.
