Description

A rich and creamy soup filled with savory bacon, cheddar cheese, and tender gnocchi, perfect for chilly days.


Ingredients

  • 8-10 slices bacon, cooked and chopped
  • 1 tbsp butter or olive oil
  • 1 large onion, diced
  • 2 large carrots, peeled and sliced
  • 4 cups chicken broth
  • 1-2 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder (or 4 cloves minced garlic)
  • ¼ tsp dried thyme
  • ½-1 tsp red chili flakes (optional)
  • 16 oz gnocchi
  • 2 cups heavy cream or half-and-half
  • 2 cups shredded cheddar cheese (medium or sharp)


Instructions

  1. Cook the bacon until crispy. Once done, chop it into small pieces and set it aside.
  2. In a large pot, heat the butter or oil over medium heat. Add the diced onions and sliced carrots. Sauté them until tender, about 5-7 minutes.
  3. Pour in the chicken broth and bring the mixture to a simmer.
  4. Add the heavy cream along with the seasonings and shredded cheese. Stir continuously until the cheese melts and everything is well combined.
  5. Add the gnocchi to the pot and cook for about 2 minutes, or until they are soft and fluffy.
  6. Stir in the cooked bacon, taste, and adjust the seasoning if necessary. Serve hot and enjoy!

Notes

Serve warm in bowls garnished with extra cheddar cheese, crispy bacon, or fresh herbs. Pairs well with crusty bread.
