Ingredients
- 2 Cucumbers, sliced
- 1 cup Tofu, cubed
- 1 cup Edamame, shelled
- 1 Avocado, diced
- 1 Bell pepper, sliced
- 2 Carrots, shredded
- 2 tablespoons Sriracha
- 1/2 cup Mayonnaise
- 2 tablespoons Soy sauce
- 2 tablespoons Lime juice
- 1 tablespoon Sesame seeds
- Salt, to taste
- Pepper, to taste
Instructions
- Slice cucumbers and vegetables into thin pieces.
- In a bowl, combine cubed tofu, edamame, and sliced vegetables.
- In another bowl, mix sriracha, mayonnaise, soy sauce, lime juice, and season with salt and pepper to taste.
- Pour the dressing over the salad and toss well.
- Garnish with sesame seeds and serve immediately or refrigerate for a chilled salad.
Notes
Use fresh, crunchy vegetables for the best texture. Adjust Sriracha to taste and consider using more mayonnaise for creaminess.
