Description

Ingredients

  • 2 Cucumbers, sliced
  • 1 cup Tofu, cubed
  • 1 cup Edamame, shelled
  • 1 Avocado, diced
  • 1 Bell pepper, sliced
  • 2 Carrots, shredded
  • 2 tablespoons Sriracha
  • 1/2 cup Mayonnaise
  • 2 tablespoons Soy sauce
  • 2 tablespoons Lime juice
  • 1 tablespoon Sesame seeds
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Slice cucumbers and vegetables into thin pieces.
  2. In a bowl, combine cubed tofu, edamame, and sliced vegetables.
  3. In another bowl, mix sriracha, mayonnaise, soy sauce, lime juice, and season with salt and pepper to taste.
  4. Pour the dressing over the salad and toss well.
  5. Garnish with sesame seeds and serve immediately or refrigerate for a chilled salad.

Notes

Use fresh, crunchy vegetables for the best texture. Adjust Sriracha to taste and consider using more mayonnaise for creaminess.
