Ingredients
- 1 cup long-grain rice
- 2 cups vegetable broth
- 1/2 cup dried cranberries
- 1/4 cup chopped pecans
- 1 small onion, chopped
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and sauté until translucent, about 3-5 minutes.
- Stir in the rice and cook for about 2 minutes.
- Add the vegetable broth, cranberries, salt, and pepper.
- Bring to a boil, then reduce heat to low and cover.
- Simmer for 15-20 minutes until the rice is cooked.
- Stir in chopped pecans before serving.
Notes
