Ingredients

  • 1 cup long-grain rice
  • 2 cups vegetable broth
  • 1/2 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1 small onion, chopped
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste


Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and sauté until translucent, about 3-5 minutes.
