Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 cups fresh cranberries
  • 1/4 cup orange juice
  • 1/4 cup sugar (for topping)


Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter, mixing until coated.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. Beat cream cheese and sugar in a stand mixer until smooth and creamy.
  5. Add vanilla extract and mix in eggs one at a time, ensuring even blending.
  6. Pour the cream cheese batter over the crust and bake for 55–60 minutes until set.
  7. Prepare the cranberry topping by simmering cranberries, orange juice, and sugar until thick, then cool and spread over cheesecake.

For best results, ensure cream cheese is at room temperature to avoid lumps. Consider adding lemon juice for a richer flavor.
