  • 3 cups powdered sugar

Instructions

  1. Make the Cupcakes: Preheat oven to 350°F (175°C). Line a muffin pan with 15–17 cupcake liners.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
  5. Alternate adding the apple cider and the dry mixture into the wet ingredients. Mix until just combined — do not overmix.
  6. Fill each cupcake liner about ⅔ full with the batter.
  7. Bake for 17–19 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cupcakes to cool completely before frosting.
  9. Make the Frosting: In a bowl, beat together the softened butter, brown sugar, cinnamon, and vanilla until creamy and fluffy.
  10. Gradually add the powdered sugar, one cup at a time, beating between each addition.
  11. Add milk, one tablespoon at a time, until the frosting reaches your desired consistency.
  12. Frost the cooled cupcakes using a piping bag or knife.

Notes

For extra flair, garnish with a sprinkle of cinnamon or a drizzle of caramel sauce. Store cupcakes in an airtight container at room temperature for up to 2 days, or refrigerate for longer freshness.
