Ingredients
- 6 large Eggs
- 2 cups Cottage Cheese (preferably curd style)
- 1 cup Spinach (fresh or frozen)
- 2 medium Tomatoes (diced)
- 1 small Onion (finely chopped)
- 2 cloves Garlic (minced)
- 1/2 cup Cheddar Cheese (shredded, optional)
- to taste Salt
- to taste Black Pepper
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish.
- In a mixing bowl, whisk the eggs until well combined.
- Fold in the cottage cheese, salt, pepper, and any additional ingredients like spinach, tomatoes, onion, garlic, and shredded cheese.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Let the bake rest for about 5 minutes before slicing and serving.
Notes
Best served warm. Can be topped with fresh herbs, avocado, or salsa.
