Ingredients

  • 6 large Eggs
  • 2 cups Cottage Cheese (preferably curd style)
  • 1 cup Spinach (fresh or frozen)
  • 2 medium Tomatoes (diced)
  • 1 small Onion (finely chopped)
  • 2 cloves Garlic (minced)
  • 1/2 cup Cheddar Cheese (shredded, optional)
  • to taste Salt
  • to taste Black Pepper


Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  2. In a mixing bowl, whisk the eggs until well combined.
  3. Fold in the cottage cheese, salt, pepper, and any additional ingredients like spinach, tomatoes, onion, garlic, and shredded cheese.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  6. Let the bake rest for about 5 minutes before slicing and serving.

Notes

Best served warm. Can be topped with fresh herbs, avocado, or salsa.
