Ingredients

  • 2 cups cottage cheese
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cucumbers, diced
  • ½ red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste


Instructions

  1. Dice the cucumbers into small, uniform pieces.
  2. Thinly slice the red onion.
  3. Drain and rinse the chickpeas under cold running water.
  4. In a large bowl, combine the cottage cheese, chickpeas, cucumbers, and red onion.
  5. Drizzle with olive oil and red wine vinegar. Season with salt and pepper.
  6. Toss the salad gently to combine.

Notes

For added flavor, try tossing in cherry tomatoes or bell peppers. Store leftovers in an airtight container and consume within two days.
