Description
A refreshing and protein-packed salad perfect for lunch or a light dinner.
Ingredients
- 2 cups cottage cheese
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 cucumbers, diced
- ½ red onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
Instructions
- Dice the cucumbers into small, uniform pieces.
- Thinly slice the red onion.
- Drain and rinse the chickpeas under cold running water.
- In a large bowl, combine the cottage cheese, chickpeas, cucumbers, and red onion.
- Drizzle with olive oil and red wine vinegar. Season with salt and pepper.
- Toss the salad gently to combine.
Notes
For added flavor, try tossing in cherry tomatoes or bell peppers. Store leftovers in an airtight container and consume within two days.
