Description

Easy-to-make bite-sized chicken rolls filled with ham and Swiss cheese, coated in breadcrumbs and baked to perfection.


Ingredients

  • 1 pound chicken breast, cut into bite-sized pieces
  • 4 ounces ham, sliced
  • 4 ounces Swiss cheese, sliced
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • 1/2 cup flour
  • Salt and pepper to taste
  • Cooking spray


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Flatten each piece of chicken with a meat mallet.
  3. Place a slice of ham and cheese on each piece of chicken.
  4. Roll the chicken around the ham and cheese and secure with a toothpick.
  5. Dip each roll in flour, then in the beaten eggs, and finally coat with breadcrumbs.
  6. Place on a baking sheet and spray with cooking spray.
  7. Bake for 20-25 minutes until golden brown and cooked through.

Notes

You can use turkey instead of chicken, cheddar cheese instead of Swiss, and gluten-free breadcrumbs for an alternative. Prep ahead of time and bake them when you’re ready to serve.
