Ingredients
- 1 tablespoon olive oil
- 1 diced onion
- 2 diced carrots
- 2 diced celery stalks
- 3 cloves minced garlic
- 4 cups vegetable broth
- 1 cup diced potatoes
- 2 cups mixed vegetables (peas, green beans, corn)
- 1 cup heavy cream or coconut milk
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions
- Gather and dice your onion, carrots, celery, and garlic.
- In a large pot, heat olive oil over medium heat. Sauté the diced onion, carrots, and celery for 5-7 minutes until softened.
- Stir in minced garlic and cook for another minute.
- Pour in vegetable broth and add diced potatoes. Bring to a gentle boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
- Add mixed vegetables and heavy cream (or coconut milk) along with thyme, salt, and pepper. Cook for an additional 5-10 minutes.
- Taste and adjust seasoning as needed.
- Ladle the soup into bowls and garnish with fresh herbs.
Notes
