Ingredients

  • 1 tablespoon olive oil
  • 1 diced onion
  • 2 diced carrots
  • 2 diced celery stalks
  • 3 cloves minced garlic
  • 4 cups vegetable broth
  • 1 cup diced potatoes
  • 2 cups mixed vegetables (peas, green beans, corn)
  • 1 cup heavy cream or coconut milk
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh herbs for garnish


Instructions

  1. Gather and dice your onion, carrots, celery, and garlic.
  2. In a large pot, heat olive oil over medium heat. Sauté the diced onion, carrots, and celery for 5-7 minutes until softened.
  3. Stir in minced garlic and cook for another minute.
  4. Pour in vegetable broth and add diced potatoes. Bring to a gentle boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  5. Add mixed vegetables and heavy cream (or coconut milk) along with thyme, salt, and pepper. Cook for an additional 5-10 minutes.
  6. Taste and adjust seasoning as needed.
  7. Ladle the soup into bowls and garnish with fresh herbs.
