- 2 to 3 celery sticks, chopped
- 2 to 3 cloves garlic, minced
- 1/2 tablespoon chopped fresh rosemary
- 1/2 tablespoon chopped fresh thyme
- 1 pound chicken breast
- 2 tablespoons all-purpose flour
- 2 cups milk
- 1 1/2 pounds potatoes, peeled and cubed
- 4 cups chicken broth
- 1 cup low-fat cheddar cheese
- A handful of roughly chopped fresh parsley
- Salt and freshly ground black pepper to taste
Instructions
- Heat olive oil and butter in a large pot over medium heat until the butter melts. Add chopped onion, carrots, and celery. Sauté until vegetables soften and begin to caramelize, about 5 minutes.
- Stir in minced garlic, rosemary, and thyme until fragrant, about 1 minute. Add chicken, season with salt and pepper, and cook until browned on all sides.
- Sprinkle flour over chicken and vegetables, stir well. Gradually whisk in milk until combined to form a smooth base. Add potatoes and broth; stir.
- Bring mixture to a boil; reduce heat to low, cover, and simmer for 20 minutes until potatoes are tender.
- Stir in low-fat cheddar cheese until melted and smooth. Adjust seasoning with more salt and pepper to taste. Stir in parsley.
- Ladle into bowls and garnish with additional parsley. Serve hot.
Notes
- Fresh herbs enhance the flavor profile.
- Caramelize onions and garlic for a richer base.
- Adjust broth consistency by mashing potatoes or using a stick blender.
