Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 medium potatoes, peeled and diced
  • 3 carrots, sliced
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • Salt and pepper to taste
  • 1 cup frozen peas (optional)


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the chicken breasts to the pot and pour in the chicken broth. Bring to a boil, then reduce to a simmer.
  4. Carefully add the diced potatoes and sliced carrots, season with thyme, salt, and pepper.
  5. Cover the pot and let it simmer for about 20-25 minutes, or until chicken is cooked and potatoes are tender.
  6. Remove the chicken, shred it using two forks, and return it to the pot.
  7. If desired, stir in frozen peas and simmer for an additional 5 minutes.
  8. Taste and adjust seasonings before serving.

Notes

For a thicker soup, mash some potatoes directly in the pot. Opt for homemade chicken broth for better flavor.
