A warm and nourishing chicken soup thickened with hearty potatoes, perfect for cozy days.
Ingredients
- 1 pound boneless, skinless chicken breasts
- 4 medium potatoes, peeled and diced
- 3 carrots, sliced
- 1 onion, diced
- 3 garlic cloves, minced
- 6 cups chicken broth
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
- Salt and pepper to taste
- 1 cup frozen peas (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the chicken breasts to the pot and pour in the chicken broth. Bring to a boil, then reduce to a simmer.
- Carefully add the diced potatoes and sliced carrots, season with thyme, salt, and pepper.
- Cover the pot and let it simmer for about 20-25 minutes, or until chicken is cooked and potatoes are tender.
- Remove the chicken, shred it using two forks, and return it to the pot.
- If desired, stir in frozen peas and simmer for an additional 5 minutes.
- Taste and adjust seasonings before serving.
Notes
For a thicker soup, mash some potatoes directly in the pot. Opt for homemade chicken broth for better flavor.
