Description

A warm and hearty chicken soup filled with tender potatoes, perfect for any day.


Ingredients

  • 2 cups of cooked chicken, shredded
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 3 ribs of celery, chopped
  • 4 cups of chicken broth
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste
  • 2 tablespoons of olive oil


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add chopped onion, carrots, and celery. Sauté for about 5 minutes until they soften.
  3. Add diced potatoes and cook for another 5 minutes, stirring occasionally.
  4. Pour in the chicken broth and add the shredded chicken and thyme.
  5. Bring the soup to a boil. Reduce the heat and let it simmer for 20-25 minutes, or until the potatoes are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot and enjoy!

Notes
