Description
A warm and hearty chicken soup filled with tender potatoes, perfect for any day.
Ingredients
- 2 cups of cooked chicken, shredded
- 4 medium potatoes, peeled and diced
- 1 onion, chopped
- 2 carrots, sliced
- 3 ribs of celery, chopped
- 4 cups of chicken broth
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add chopped onion, carrots, and celery. Sauté for about 5 minutes until they soften.
- Add diced potatoes and cook for another 5 minutes, stirring occasionally.
- Pour in the chicken broth and add the shredded chicken and thyme.
- Bring the soup to a boil. Reduce the heat and let it simmer for 20-25 minutes, or until the potatoes are tender.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
Can be paired with crusty bread or crackers. Soup can be stored in the fridge for 3-4 days or frozen for up to 3 months.
