Ingredients

  • 1 cup jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1 cup water
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil


Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, combine the coconut milk, water, turmeric, and salt. Stir well.
  3. Add the rinsed rice and olive oil to the pot and stir again.
  4. Bring the mixture to a boil over medium heat.
  5. Reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked. Remove from heat and let it sit for 5 minutes before fluffing and serving.

Notes

Make sure to rinse the rice to avoid a gluggy texture. Letting the rice rest helps absorb the flavors.
