Ingredients
- 4 salmon fillets (fresh or frozen)
- 1 can (13.5 oz) coconut milk
- 2 limes, juiced and zested
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix together the coconut milk, lime juice, lime zest, honey, soy sauce, and minced garlic.
- Place the salmon fillets in a baking dish, optionally lined with parchment paper.
- Pour the coconut lime mixture over the salmon.
- Season with salt and pepper to taste.
- Bake for 15-20 minutes until the salmon is cooked through and flakes easily.
- Garnish with fresh cilantro before serving.
