Ingredients

  • 1 can coconut milk
  • 4 cups vegetable broth
  • 2 tablespoons red curry paste
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 carrots, sliced
  • 1 bell pepper, chopped
  • 2 cups baby spinach
  • Salt and pepper to taste
  • Dumplings (store-bought or homemade)


Instructions

  1. In a large pot, heat a little oil over medium heat. Add the onion, garlic, and ginger, and sauté until fragrant.
  2. Stir in the red curry paste and cook for another minute.
