Ingredients
- 1 can coconut milk
- 4 cups vegetable broth
- 2 tablespoons red curry paste
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 carrots, sliced
- 1 bell pepper, chopped
- 2 cups baby spinach
- Salt and pepper to taste
- Dumplings (store-bought or homemade)
Instructions
- In a large pot, heat a little oil over medium heat. Add the onion, garlic, and ginger, and sauté until fragrant.
- Stir in the red curry paste and cook for another minute.
- Pour in the coconut milk and vegetable broth, and bring to a simmer.
- Add the carrots and bell pepper, and cook until tender.
- Mix in the spinach and season with salt and pepper.
- Cook the dumplings according to package instructions or make your own and add them to the soup.
- Serve hot and enjoy!
