A fun and delicious twist on the classic club sandwich, this pasta salad combines all the favorite flavors into a satisfying dish perfect for picnics and potlucks.
Ingredients
- 8 oz pasta (rotini or penne)
- 1 cup cooked turkey or chicken, diced
- 1 cup cooked bacon, crumbled
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup cheddar cheese, cubed
- 1/4 cup mayonnaise
- 1/4 cup Greek yogurt
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- Lettuce leaves for serving
Instructions
- Cook the pasta according to package instructions until al dente. Drain and let cool.
- In a large bowl, combine the cooked pasta, turkey or chicken, bacon, cherry tomatoes, cucumber, and cheddar cheese.
- In a small bowl, mix together mayonnaise, Greek yogurt, Dijon mustard, salt, and pepper. Adjust seasoning to taste.
- Pour the dressing over the pasta salad and gently toss to coat.
- Serve on lettuce leaves or refrigerate until ready to serve.
