Description

A rich and flavorful Southern tomato pie made with layers of fresh tomatoes, sweet onions, crispy bacon, and a creamy mozzarella-mayo topping, all baked in a flaky deep-dish pie crust. A true taste of Southern summer comfort.

  • 1 (10-inch) deep dish pie crust, partially baked
  • 3 medium-sized tomatoes, sliced (~18 slices)
  • Kosher salt
  • 2 slices bacon, cooked and crumbled
  • 1 small Vidalia or other sweet onion, thinly sliced (~1 cup)
  • 3 cups shredded mozzarella cheese, divided
  • Pinch of granulated sugar (optional)
  • Freshly cracked black pepper
  • Garlic powder, to taste
  • 2 tablespoons chopped fresh basil
  • 1 cup regular mayonnaise (not light/fat-free)
  • ½ teaspoon hot sauce (optional)
  • ⅛ cup chopped fresh parsley

Instructions

  1. Preheat oven: Set oven to 400°F (200°C). Place pie crust in a deep pie dish, crimp edges, and dock with a fork. Bake for 15–20 minutes until lightly browned. Let cool. Reduce oven temperature to 350°F (175°C).
  2. Prep tomatoes: Lay sliced tomatoes on paper towels, sprinkle with kosher salt, cover with more towels, and let drain for 30 minutes.
  3. Cook bacon and onions: Cook bacon until crisp and set aside. Sauté sliced onions in the bacon drippings until soft but not browned. Set aside.
  4. Assemble the pie: Sprinkle ½ cup shredded mozzarella into the bottom of the crust. Layer with half the tomato slices. Season with pepper, garlic powder, and sugar if using. Add half of the basil, sautéed onions, crumbled bacon, and another ½ cup mozzarella. Repeat layers, excluding the last cheese layer.
  5. Make topping: In a bowl, mix together mayonnaise, hot sauce (if using), chopped parsley, and remaining 2 cups of mozzarella. Spread evenly over the pie.
  6. Bake: Bake at 350°F for 40–45 minutes, until top is golden and bubbly.
  7. Cool and serve: Let cool to room temperature before slicing with a serrated knife. Serve warm or cold. Refrigerate leftovers.

Notes

For best texture, make sure tomatoes are fully drained. Use a combination of heirloom and Roma tomatoes for richer flavor. Add a few slices of fresh mozzarella for a stretchy texture.
