Description

A delightful blend of candied fruits and spices with a rich buttery cake, perfect for the holidays.


Ingredients

  • 2 cups mixed dried fruits
  • 1 cup chopped nuts
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup orange juice


Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine the mixed dried fruits and chopped nuts.
  3. In a separate bowl, cream the unsalted butter and brown sugar together until fluffy and well combined.
  4. Add the eggs one at a time to the butter mixture, ensuring each egg is mixed in thoroughly before adding the next.
  5. Sift together the flour, baking powder, ground cinnamon, ground nutmeg, and salt, and then gradually fold these dry ingredients into the wet mixture.
  6. Carefully fold in the fruit and nut mixture until everything is evenly distributed.
  7. Pour in the orange juice and stir until the batter is just combined. Be careful not to overmix.
  8. Pour the batter into a greased cake pan, smoothing the top with the back of a spoon.
  9. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool completely before serving.
