Ingredients
- 2 cups mixed dried fruits
- 1 cup chopped nuts
- 1 cup unsalted butter
- 1 cup brown sugar
- 4 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/4 cup orange juice
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine the mixed dried fruits and chopped nuts.
- In a separate bowl, cream the unsalted butter and brown sugar together until fluffy and well combined.
- Add the eggs one at a time to the butter mixture, ensuring each egg is mixed in thoroughly before adding the next.
- Sift together the flour, baking powder, ground cinnamon, ground nutmeg, and salt, and then gradually fold these dry ingredients into the wet mixture.
- Carefully fold in the fruit and nut mixture until everything is evenly distributed.
- Pour in the orange juice and stir until the batter is just combined. Be careful not to overmix.
- Pour the batter into a greased cake pan, smoothing the top with the back of a spoon.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely before serving.
Notes
To preserve freshness, store in an airtight container. Can also be frozen for up to 3 months.
