Description
A moist and fluffy cinnamon swirl bread with a crackly sugar top and rich cinnamon flavor. Simple to make, delicious to eat — perfect for breakfast, brunch, or a sweet snack.
Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 3/4 teaspoon salt
- 1 teaspoon ground cinnamon (for the batter)
- 1 cup granulated sugar (for the batter)
- 1 egg
- 1 cup milk
- 1/3 cup vegetable or canola oil
- 1 teaspoon vanilla extract
- 1 tablespoon butter (to grease the pan)
- For the swirl: 1/3 cup sugar + 3 teaspoons cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5” loaf pan with butter.
- In a small bowl, mix 1/3 cup sugar and 3 teaspoons cinnamon; set aside.
- In a large bowl, whisk together flour, baking powder, salt, 1 teaspoon cinnamon, and 1 cup sugar.
- In another bowl, whisk the egg, milk, oil, and vanilla extract.
- Combine wet and dry ingredients; stir gently until just combined (do not overmix).
- Pour half the batter into the prepared pan. Sprinkle with half of the cinnamon sugar mixture.
- Add the remaining batter and gently swirl with a knife.
- Top with the remaining cinnamon sugar mixture.
- Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Optional: add chopped walnuts or drizzle with icing once cooled for an extra treat. Stores well for up to 3 days at room temperature.
