Description

A moist and fluffy cinnamon swirl bread with a crackly sugar top and rich cinnamon flavor. Simple to make, delicious to eat — perfect for breakfast, brunch, or a sweet snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1 teaspoon ground cinnamon (for the batter)
  • 1 cup granulated sugar (for the batter)
  • 1 egg
  • 1 cup milk
  • 1/3 cup vegetable or canola oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter (to grease the pan)
  • For the swirl: 1/3 cup sugar + 3 teaspoons cinnamon


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5” loaf pan with butter.
  2. In a small bowl, mix 1/3 cup sugar and 3 teaspoons cinnamon; set aside.
  3. In a large bowl, whisk together flour, baking powder, salt, 1 teaspoon cinnamon, and 1 cup sugar.
  4. In another bowl, whisk the egg, milk, oil, and vanilla extract.
  5. Combine wet and dry ingredients; stir gently until just combined (do not overmix).
  6. Pour half the batter into the prepared pan. Sprinkle with half of the cinnamon sugar mixture.
  7. Add the remaining batter and gently swirl with a knife.
  8. Top with the remaining cinnamon sugar mixture.
  9. Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Optional: add chopped walnuts or drizzle with icing once cooled for an extra treat. Stores well for up to 3 days at room temperature.
