Cinnamon Banana Bread Muffins

Description

Soft and flavorful muffins made with ripe bananas and warm cinnamon, perfect for breakfast, snacks, or dessert.


Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter into the mashed bananas.
  4. Add baking soda and salt, and mix well.
  5. Stir in the sugar, beaten egg, and vanilla extract until combined.
  6. Gradually add the flour and ground cinnamon, mixing until just combined.
  7. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

For the best flavor, use very ripe bananas. Optionally, sprinkle cinnamon sugar on top before baking or add nuts/chocolate chips for extra flavor.
