Description

Bright and fresh cilantro lime rice that adds zest to any meal. Quick and easy to prepare!


Ingredients

  • 2 cups white rice
  • 4 cups water
  • 1 teaspoon salt
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon olive oil


Instructions

  1. Rinse the rice under cold water to remove excess starch.
  2. In a pot, bring water and salt to a boil.
  3. Add the rice, reduce heat to low, cover, and simmer for 18-20 minutes.
  4. Remove from heat and let sit for 5 minutes.
  5. Fluff the rice with a fork.
  6. Stir in cilantro, lime juice, and olive oil.
  7. Serve warm.

Notes

Feel free to substitute jasmine or basmati rice for a different flavor. Lemon juice can replace lime if needed.
