Description
Bright and fresh cilantro lime rice that adds zest to any meal. Quick and easy to prepare!
Ingredients
- 2 cups white rice
- 4 cups water
- 1 teaspoon salt
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1 tablespoon olive oil
Instructions
- Rinse the rice under cold water to remove excess starch.
- In a pot, bring water and salt to a boil.
- Add the rice, reduce heat to low, cover, and simmer for 18-20 minutes.
- Remove from heat and let sit for 5 minutes.
- Fluff the rice with a fork.
- Stir in cilantro, lime juice, and olive oil.
- Serve warm.
Notes
Feel free to substitute jasmine or basmati rice for a different flavor. Lemon juice can replace lime if needed.
