Description

A delightful chocolate roulade filled with whipped cream and mixed berries, perfect for festive gatherings.


Ingredients

  • 4 large eggs
  • 100g granulated sugar
  • 75g all-purpose flour
  • 25g cocoa powder
  • 200ml heavy cream
  • 150g mixed berries
  • Powdered sugar for dusting


Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Whisk the eggs and sugar until thick and pale, about 5-7 minutes.
  3. Sift in the flour and cocoa powder, gently folding to combine.
  4. Spread the mixture onto a lined baking tray evenly.
  5. Bake for 10-12 minutes until firm to the touch.
  6. Cool the cake on a damp towel and then roll it while still warm.
  7. Once cooled, whip the cream, fold in berries, fill the roulade, and roll it up again.

Notes

Serve garnished with fresh berries or with a scoop of ice cream for added delight.
