Description

A classic British dessert enriched with dried fruits, spices, and brandy, perfect for the festive season.


Ingredients

  • 200g raisins
  • 200g sultanas
  • 100g currants
  • 100g chopped mixed peel
  • 150g brown sugar
  • 100g breadcrumbs
  • 100g plain flour
  • 1 tsp mixed spice
  • 1 tsp baking powder
  • 2 large eggs
  • 150ml milk
  • 50ml brandy


Instructions

  1. Preheat your steamer or a large pot filled with water.
  2. In a large bowl, combine all the dried fruits along with the mixed peel.
  3. Add brown sugar, breadcrumbs, plain flour, mixed spice, and baking powder. Mix well.
  4. In a separate bowl, beat the eggs, then stir in the milk and brandy.
  5. Mix the wet ingredients into the dry mixture until well combined.
  6. Transfer the mixture to a greased pudding basin.
  7. Cover the basin with parchment paper and foil.
  8. Steam for 6 hours, checking and adding water as necessary.
  9. Cool and store until ready to serve.
  10. Reheat by steaming for 2 hours before serving.

Notes

Soak dried fruits in brandy overnight for enhanced flavor. Ensure all ingredients are fresh for the best taste.
