A classic British dessert enriched with dried fruits, spices, and brandy, perfect for the festive season.
Ingredients
- 200g raisins
- 200g sultanas
- 100g currants
- 100g chopped mixed peel
- 150g brown sugar
- 100g breadcrumbs
- 100g plain flour
- 1 tsp mixed spice
- 1 tsp baking powder
- 2 large eggs
- 150ml milk
- 50ml brandy
Instructions
- Preheat your steamer or a large pot filled with water.
- In a large bowl, combine all the dried fruits along with the mixed peel.
- Add brown sugar, breadcrumbs, plain flour, mixed spice, and baking powder. Mix well.
- In a separate bowl, beat the eggs, then stir in the milk and brandy.
- Mix the wet ingredients into the dry mixture until well combined.
- Transfer the mixture to a greased pudding basin.
- Cover the basin with parchment paper and foil.
- Steam for 6 hours, checking and adding water as necessary.
- Cool and store until ready to serve.
- Reheat by steaming for 2 hours before serving.
Notes
Soak dried fruits in brandy overnight for enhanced flavor. Ensure all ingredients are fresh for the best taste.
