Ingredients
- 2 cups mixed dried fruits
- 1 cup chopped nuts
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup unsalted butter
- 1 cup brown sugar
- 4 large eggs
- 1/2 cup orange juice
- 1/4 cup rum
Instructions
- Preheat the oven to 300°F (150°C).
- Grease and line a cake pan with parchment paper.
- Mix the dried fruits and nuts with 1 tablespoon of flour in a bowl.
- Cream the butter and brown sugar until light and fluffy.
- Beat in the eggs one at a time.
- Mix in the orange juice and rum.
- Combine the flour, baking powder, cinnamon, and nutmeg in a separate bowl.
- Gradually add the dry ingredients to the wet mixture until fully incorporated.
- Fold in the fruit and nut mixture gently.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 1.5 to 2 hours, or until a toothpick inserted comes out clean.
- Let the cake cool in the pan before transferring it to a wire rack.
